Mexican Shrimp Cocktail Recipe

A refreshing, flavor-packed dish your family will beg for all year round—not just on holidays! Bright, tangy, and loaded with shrimp and veggies.

Ingredients:

  • 1/3 cup Spanish onion (chopped)
  • 1/4 cup fresh lime juice
  • 1 lb cooked medium shrimp (peeled & deveined, tails removed)
  • 2 roma tomatoes (chopped)
  • 1 cucumber (finely chopped)
  • 1 stalk celery (finely chopped)
  • 1 jalapeño (seeded & finely chopped)
  • 2 tsp salt
  • 2 tsp ground black pepper
  • 1½ cups chilled tomato and clam juice cocktail (like Clamato)
  • 1 cup chilled ketchup
  • 1 bunch cilantro (stems discarded, leaves chopped)
  • 2 tbsp hot pepper sauce (adjust to taste)
  • 2 ripe avocados (peeled, pitted & chopped)

Instructions:

  • In a bowl, combine chopped onion and lime juice. Let sit for 5–10 minutes to mellow the bite.

  • Add shrimp, tomatoes, cucumber, celery, jalapeño, salt, and pepper. Stir gently to combine.

  • Pour in tomato-clam juice and ketchup. Mix until everything is well coated.

  • Stir in chopped cilantro and hot sauce.

  • Gently fold in avocado just before serving.

  • Chill for 30 minutes or serve immediately for a bold, fresh taste.
